Take a part of Haiku home, we source our matcha from a well known grower of premium Matcha in Uji, Kyoto, Japan. Our third of our green tea collection, our ceremonial sora Okumidori matcha is meticulously sourced from select Okumidori tea leaves and crafted according to tradition. Okumidori is recognized as Japan's most distinguished matcha cultivars, noted for profound umami and refined character.
Sora, meaning sky, represents our signature ceremonial grade Uji Matcha, composed entirely of 100% Okumidori cultivar. Sora offers a rich, silky liquor that achieves an impressive balance of sweetness, mild astringency, complemented by floral notes, delicate umami and a smooth, pleasant mouthfeel. Exhibiting a vibrant green hue indicative of the first flush leaves harvested in spring, these leaves are cultivated under shade for a short 20 days duration. This blend is recommended for traditionally prepared Usucha (thin matcha) drinks, high-grade matcha lattes and cold brew matcha.

We ensure our producer uses only the youngest leaves coupled with longer periods of shading, to deliver sweetness over astringency. Haiku Matcha is produced using the jet milling process for finer powder for finer cups of tea.
Freshness
Our Matcha, alongside with our Hojicha is blended monthly on order and air freighted in from Japan at peak freshness. We rely directly on tea farmers, rather than trading companies, paying our producers the right price for the right quality.

Usucha Traditional Matcha Brewing Notes:
1. Gently sift 2-4 grams (1-1.5 teaspoon) of Matcha powder in a small bowl or mug
3. Whisk gently with a chasen whisk with 60-80 ml of 80°c water to create a fine, creamy foam
