Directions
1. Toast the bread: Toast your bread slices to your preferred level of crispiness.
2. Prepare the avocado: Cut the avocados in half, remove the pit, and scoop out the
flesh into a bowl. Mash the avocado with a fork, leaving it as chunky or smooth as
you like.
3. Season the avocado: Add a squeeze of lemon juice (if desired), and season with a
pinch of regular salt, red pepper flakes, and a drizzle of olive oil. Mix well.
4. Assemble the toast: Spread the mashed avocado evenly onto the toasted bread. Add
your favourite style of egg on top.
5. Sprinkle with Haiku Matcha Salt: Sprinkle your matcha salt over the top of the avocado
6. Garnish and serve: Top with fresh herbs or extra red pepper flakes for added flavor
and presentation.
